Hard Marmalade
There I said it. Hard marmalade. Its a thing I've been trying out.
Normally I would cut up the oranges and soak in water overnight, boil the next day and then add an equal amount of sugar. This produces marmalade similar to shop bought, without the pectin and preservatives obviously. But it takes about 24 hours of waiting around.
What if I only wanted one jar and I need it now? As in right now....
I took two lemons and sliced them thin. I added sugar and brought to a fast boil. Once it went sticky I let it cool (for a about 10 seconds) and then ate it on toast.
Not bad, I have to say. Just a bit chewy.
More investigation is needed. No one liked it but me....
